Are you bored eating plain rice and side dishes every day? Do you want your kids to finish their school lunch happily?
There are so many rice varieties you can try out. One of the easiest rice is Lemon rice.
Lemon rice, Lemon Sadam is a traditional Tamil food. It is an easy-to-make dish, healthy and appetizing. Also, there is no need for a special side dish, just a pappad and pickle is enough. Mostly prepared with the leftover rice, so the preparation will be less for households.
Let's start making.
Preparation Time: 20 minutes
Cooking Time: 35 minutes
Ingredients;
Rice - 1 cup (soaked or use leftover rice)
Water - 1 1/2 cup ( use double for 2 cups of rice)
Oil - As required
Mustard - 1 tsp
Chana dal - 1 tbsp
Urad dal - 1 tbsp
Red chili - 2
Ginger - Small piece
Curry leaves - 15- 20 leaves
Peanut/cashew, Raisins - 1/4 cup
Lemon juice - 2 tbsp
Turmeric powder - 1/2 tsp
Hing / Asafoetida - as per taste
Salt - as per taste
Cooking:
Rice;
Step 1;
Wash soak rice for at least 15 minutes.Step 2;
Now place a pan on the stove and add 1 1/2 cups of water, salt (should taste a little salty, not too much), and lemon juice (1 tbsp).Step 3;
Now close the lid and allow the rice to cook for 15 - 20 minutes. Once the rice is cooked fluff it with a fork and transfer it to a plate and allow it to cool down.
Lemon rice;
Step 1;
Once the oil is hot add cashew or peanut and fry it. Transfer it into a small bowl.
Fry raisins in the same pan and transfer them to a bowl to cool down.
Now add mustard, urad dal, chana dal into the pan and allow it to splutter.
Once done add whole red chilli, let it turn into dark red colour.
Add curry leaves and ginger saute for 1 minute.
Step 2;
Now add Hing / asafoetida and turmeric powder. Saute well until the raw smell disappears. Step 3;
Place the flame to simmer.Now add the rice along with 1 tbsp lemon juice and salt to taste. Mix well until every rice becomes yellow in colour. Fuff the rice with a wooden spatula and mix well.
Add the roasted peanut/cashew and raisin, mix well.
Enjoy it with pappadam and pickle.
