Ingredients;
Chickpea (soaked overnight) - 1 cup
Tahini - 3 tbsp
Lemon juice - 2 tbsp
Garlic - 2 cloves (big)
Salt - as per taste
Cold Water - as required
Olive oil - 2 tbsp
Paprika - for garnish
Preparation;
- Soak 1 cup of white chickpea overnight.
- Drain the soaked chickpea and place them in a pressure cooker. Add water to cook and cook for 4 whistles. Overcooked chickpea is best for making hummus.
- Peel the skin of chickpea for the soft silky creamy texture of hummus.
How to peel the chickpea easily?
Put the cooked chickpea in hot water and add 1 1/2 tsp of baking soda. Leave it for a few minutes. Now rub the chickpea under the cold running water. You can easily peel off the skin this way.
- Cool the chickpea completely before grinding.
- Take a mixer grinder, put chickpea, lemon juice, olive oil garlic, salt, and cold water. Blend it well. add 2 to 3 ice cubes.
- Add tahini paste into it and blend until it forms a smooth soft paste.
- Check for salt, add if necessary.
- Hummus is ready to serve
- Transfer it to a serving plate and with a spoon make swooshes on the top.
- For garnishing drizzle some olive oil on top of the hummus and add some paprika.
You can refrigerate the leftover hummus for up to 1 week.
What is Tahini?
Tahini or Tahina (sesame paste) is a paste made of sesame seeds. It is used in many cuisines especially Middle Eastern, Mediterranean, North Africa, etc... It is the main ingredient for making Hummus.
