Chow Mein | Egg Chow mein recipe || Infothora Recipes

 

Chow Mein is a popular Chinese dish. It is prepared with noodles and vegetables. Chicken, egg, etc are also used to prepare Chow mein. Here is the recipe for Egg Chow Mein.


Ingredients;

  • Hakka noodles - 200 grams
  • Water - 5 cups
  • Olive oil / Sunflower oil - 2 tbsp
  • Egg - 3
  • Ginger - 1 tsp (chopped)
  • Garlic - 1 tsp (chopped)
  • Onion - 2 medium sizes (sliced)
  • Carrot - 1 
  • Green chili - 2 (chopped)
  • Capsicum (red, green, yellow) - 3/4 cup
  • Spring Onion (White portion)- 1 handful
  • Spring Onion (green portion) - 1 handful
  • Black pepper - 1/2 tsp
  • Soy sauce - 1 tsp
  • Vinegar - 1 tsp
  • Salt - to taste
  • Sugar - 1 pinch

Preparation;

  • Pour 5 cups of water into a pan. 
  • Add olive oil and salt and bring to boil.
  • Add noodles and cook as per the instruction in the package.
  • Once it is cooked, drain the noodles and rinse them under running water.
  • Sprinkle some oil into the noodles and kept them aside.
  • Now add 1 tsp of oil to a pan and heat it. 
  • Mix eggs and a little salt in a bowl and blend it.
  • Add the egg mixture into the hot oil and cook well and make scrambled egg. Transfer it into a bowl and keep it aside.
  • Now add the remaining oil into the heavy bottom pan and heat it. 
  • Put chopped ginger, garlic, and green chilli and cook until the raw smell goes.
  • Once it is done, add all of the vegetables into the pan and stir well. (save some green portion of spring onion for garnishing)
  • Add salt, sugar, Soy Sause, Vinegar, and Black pepper into the vegetables and mix well.
  • Add scrambled egg and noodles into the veggies and mix well. 
  • Mix thoroughly.
  • Garnish with spring onion ( You can garnish it with green chillis dipped in vinegar too)
Serve hot and enjoy this delicious Chow Mein.
