Chickpea Rice With Leftover Kadala Curry / Chickpea Curry || Infothora Recipes
This Chickpea Rice is made with the leftover Kadala Curry / Chickpea curry. This is an easy lunch box recipe.
Ingredients;
- Kadala Curry / Chickpea Curry
- Bay leaves - 2
- Cardamon - 4
- Cinnamon
- Cloves - 4
- Whole Black pepper - 8-10
- Basmati Rice - 1 Cup
- Water - 1 1/2 Cups
- Sunflower oil
- Salt
Preparation;
- Add sunflower oil into a pan and wait until it is hot.
- Once the oil is hot add, bay leaves, Cardamon, Cinnamon, Cloves, and whole black pepper.
- Saute them for half a minute and add the kadala curry/chickpea curry into it.
- Mix it well and allow it to cook until the water evaporates.
- Once the water is evaporated, add 1 cup of basmati rice and mix well.
- Now pour 1 1/2 cups of water into the pan and mix them using a wooden spatula.
- Add salt for taste.
- Close the pan with an air-tight lid and put the flame on low for 15 minutes.
- After 15 minutes open the lid and check the rice. Add coriander leaves on top if you want.
Serve hot with Pappadam (pappad), Raita, and Pickle of your choice.
